Churros - Perfect to Bake during Lockdown Season

Over lockdown number five, a lot of us are feeling super down and bored. I’ve found comfort in baking and cooking - especially easy sweet treats! Here’s a simple and short recipe on making churros for you all to enjoy at home.
You will need:
50g unsalted butter, melted
2 tbsp caster sugar
1 tsp vanilla extract
190g (1 1/4 cups) plain flour
2 eggs
Icing sugar (interchangeable with cinnamon sugar), to dust
1 cup of water
Oil (preferable vegetable), for frying

Electric beater
Piping bag with nozzle*

Sift
Recipe
Put one cup of water in a medium saucepan and add butter and sugar. Bring to a boil and add vanilla and a pinch of regular salt. Stir for three minutes over medium heat (until butter is melted).
Add your flour and use a wooden spoon to stir vigorously until a smooth ball of dough forms, set aside and allow to cool for about 10 minutes.
Transfer into a large bowl and use an electric beater to beat in one egg at a time, giving time to beat well between each addition.
Transfer your mixture into a piping bag with a nozzle of your choice (usually a star tip nozzle).
Prepare a large saucepan of oil (vegetable preferably) and bring to about 175 - 190 Degrees Celsius
Use scissors and snip lengths of your choice as you pipe slowly into oil, and allow to fry for around 4 - 5 minutes, until golden brown.
Take out and place on a paper towel and dry off oil a little.
Top with icing sugar, use a sift to dust it onto the churros.
Enjoy with chocolate dip!
* If you don’t have a piping bag to use, don’t worry, just drop dough balls into the oil instead and make churro donuts!
Chocolate dipping sauce
You will need:
1 cup (250ml) thickened cream
1/3 cup (75g) light brown sugar
1 tbsp cocoa powder
85g 70% cacao dark chocolate (interchangeable with milk chocolate), coarsely chopped
1 tsp vanilla extract

In a small saucepan whisk your cream, then your sugar, then your cocoa powder and a pinch of regular salt until simmering. Remove from heat and add your chocolate and vanilla, stirring until smooth.
Take out a spoonful and put it in a dipping bowl. Serve with churros for the ultimate taste! Keep over low heat to warm.
